The summer is officially over!
Dear Summer,
I know yeah Y’all gonna miss me.LOL. Nah this isn’t Hov, however, I will not miss this summer. Next year maybe. Anticipating the fall and good vibes, I look to this meal for hope.

BBQ Cod w/ Watermelon & Feta Salad Ingredients

BBQ Cod

Alaskan Cod – 16 oz.
Taco Mix Seasoning – 2 1/2 tablespoons (Trader Joe’s)
BBQ Sauce – 4 tablespoons (Your favorite will do)

Watermelon & Feta Salad

Mixed Greens  – 2 1/2 cups
Watermelon Chunks – 1 cup
Feta Cheese – 4 oz.
Watermelon Radish – 4 sliced
Pumpkin Oil – 1 tablespoon
Sesame Oil – teaspoon

BBQ Cod w/ Watermelon & Feta Salad Directions 

BBQ Cod 

1) Preheat the oven on broiler
2) Cut fish into two pieces and rub seasoning on both sides of the fish
3) Place fish on a non-stick baking pan
4) Cook fish for no more than 10 mins
5) Four minutes into the cooking, take out and add your favorite BBQ sauce to the mix
6) Put back into the oven and do the same in eight minutes.
7) Put back in the oven for an extra min and take out.

Watermelon & Feta Salad 

1) In a mixing bowl add as followed
2) Pumpkin Oil, Salad, Watermelon
3) Mix ingredients together
4) Add in Feta cheese, sesame oil, radish and mix again

FYI – Watch the fish while it is in the broiler to avoid burning the fish.
