Today’s recipe was inspired by Tamarind and the Holidays. I wanted to create a beverage that resembled celebrating the Holidays on a tropical island and this Tamarind drink does the trick, like a tropical eggnog.

Tamarind Iced Latte Ingredients

10 cups of water
15 Tamarind pods
1 cup sugar
1/2 cup of coconut milk
Dash of cinnamon – optional

Tamarind Iced Latte Directions

  1. Add 10 cups to a large pot and boil water.
  2. Rinse tamarind pods and add the pods to the pot.
  3. Reduce the heat once water is boiled.
  4. Turn heat off, add sugar and stir.
  5. Once the sugar is dissolved, with gloves remove the skin of each pod until you see the seed.
  6. Remove the seed and get out as much pulse as possible.
  7. Strain the liquid and then blend.
  8. Taste and add more sugar if needed, then place in fridge to cool.
  9. Once chilled at coconut milk, stir and add ice.
  10. Enjoy.
